I think one of my most favorite salads is a roast beet salad with crumbly goat cheese, a sprinkle of toasty pine nuts and a drizzle of honey. However, beets are also wonderful raw. They add a delicious crunch when shaved in a chopped salad and they give you a burst of energy when incorporated into a freshly pressed vegetable juice like this one. I also love a beet or two in a smoothie. This February, give your Valentine a burst of love in this Beet-Blueberry Smoothie.
Beet Blueberry Smoothie
Serving Size: 1 (~330 calories)
Ingredients
1 medium raw beet, skin on, roughly chopped
1 cup blueberries*, frozen
1/4 cup cashews
1/2 cup almond milk (I like the Blue Diamond brand, Original)
1 cup water
1/8th TEAspoon Stevia or 1 tablespoon of good honey or maple syrup
handful of ice
